Our newest collab with the boys from Roses by the Stairs was thought up while we were brewing with them earlier this summer in Phoenix. This Dark Mexican Lager starts with a vienna malt base, some flaked maize, and a touch of midnight wheat malt for color. We balanced the delicious malt character with a sprinkling of Spalter and Saaz hops, then lagered this one for a good 6 weeks! An absolute crusher of a Dark Lager that we think will pair well with our "fall" weather.
In the night, I have witnessed a bird, a bird of prey, that has talons of gold. They call him Oro de Noche. The eagle preys upon those that lust for more... like the mouse that wants more grain. Yet, I sit wanting more gold. Will I also be someone’s prey?
